Ingredients: Whole or halved or quartered boiled potatoes or whole baked potatoes Salt and Pepper Grater with large grater surface

Directions:For boiled potatoes in water either peel or leave peels on but scrub potatoes well. Bring potatoes to a boil then lower heat and simmer for 20 minutes Drain off water, cool then put in the refrigerator. Refrigerate over night is best but in the fridge until very cold is ok too. Use a large hole grater surface either electric or hand box grater is best. Grate potatoes into a bowl and add all at once to a heated fry pan, sprayed or coated with bacon grease is best. Salt and pepper to taste Cook until golden and crisp stirring and turning occasionally so they don't burn. Put baked potatoes in refrigerator over night or until very cold. Peel the baked potato or leave the peels on. Shred and prepare same as boiled potatoes |

Notes: When I make mashed potatoes I quarter them and cook more than I want to mash then take out the cooked potatoes I don't want to mash and refrigerate them over night and shred them for hash browns. I get two meals of potatoes in one cooking. You can also make Country Style hash browns by cutting the cold potatoes into small cubes or chunks and frying them same as shredded hash browns
