4 c. Cooked Rice (Completely cooled)
1/2 c. Frozen Peas
1/2 c. Chopped Carrots
2 Eggs, whisked
1/2 c. Soy Sauce
1 tbsp. Oil
1 tsp. Garlic Powder
1 tsp. Onion Powder
1 tsp. Chili Powder
1 1/2 tsp. Ground Ginger
3 Green Onions

Optional (cooked chicken breasts, shrimp, or spam)

Directions:
Directions:
1. Add veggies and oil to a large skillet and saute 3-4 mins until cooked through.

2. Scoot all veggies to one half of pan and add egg to other half. Allow to cook for 1 minute, then scramble with veggies and meat if using.

3. Add cooled rice to pan. Add soy sauce and seasonings and stir over medium heat for 6-8 mins until browned.

4. Remove from heat and stir in green onions.

5. Serve topped with sriracha if desired.
