1 Quart Milk - use whole milk, not 2 %
1/2 Cup Butter or Margarine
1 Cup Quick Cooking Grits- Not Instant. ( If you use "pure" grits, allow for more cooking time.)
1 Cup Grated Swiss Cheese
1/3 Cup Grated Parmesan Cheese
Salt and Pepper to taste

Bring milk and butter to slow boil- slowly add grits and stir until thick. Put grits mixture into a large bowl and beat for at least 5 minutes until creamy. Fold in Swiss cheese, Parmesan cheese, salt and pepper - with a wooden spoon. ( Recipe says wooden!)
Put into a greased 2 quart casserole and sprinkle with more of the Parmesan cheese. Dot with more butter and bake in a preheated 375 degree oven for about 40 minutes.
