3 c. mashed sweet potatoes
2 eggs
1/2 c. sugar
1/4 c. half -and-half cream
1/4 c. butter, softened
2 tsp. Vanilla extract
1/8 tsp. salt

Toppings
1/2 c. packed brown sugar
2 Tbsp. all purpose flour
1/4 c. cold butter, cubed
1/2 c. chopped pecans

Preheat oven to 350º

1. In a large bowl, combine the first seven ingredients; beat until light and fluffy. Transfer to a greased 11-inch baking dish

2. For topping, combine the brown sugar and flour in a bowl; cut in butter until crumbly. Fold in pecans. Sprinkle over sweet potato mixture

3. Bake, uncovered at c for 30-35 minutes or until a thermometer reads 160º
