One pound bulk pork sausage,crumbled
1 minced onion
1 1/2 C. chopped celery
1-stick butter or margarine
8 cups corn bread crumbled
1 1/2 tsp sage
1 tsp thyme
salt and pepper
1 C. finely chopped apples

Directions:
Directions:
Cook sausage, onion and celery until meat is brown and onion is tender. Drain off fat.
Add enough butter to sausage fat to measure 1.C.

Add butter and remaining ingredients and toss.

Yield 9 cups (enough for a 12 lb turkey)

Apple raisin- omit sausage, use 1 C butter. Decrease bread to 7 cups and add 1 Tbs salt, 3 C finely chopped apples and 3/4 C raisins with remaining ingredients.


Southern Pecan- omit sausage, use 3/4 C butter add 2 cupsc oarsely chopped pecans and 2 tsp salt with remaining ingredients.
