1 cup butter
2 cups sugar
4 eggs
3 cups mashed sweet potato
3 cups flour, sifted
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup chopped nuts
1/2 cup shredded coconut

Directions:
Directions:
Preheat oven to 350 degrees. Cream butter well and slowly add sugar, beating well. Add eggs, one at a time, beating after each. Add potatoes and vanilla.

In a separate bowl, sift flour with baking powder, salt, baking soda, cinnamon, and nutmeg. Blend flour mixture into butter mixture; fold in nuts and coconut.

Bake in large tube pan, covered with waxed paper on the bottom, at 350 degrees for one hour.
