4 cups warm water
2 tablespoons buttermilk powder
1 cup potato pearls softened in hot water
2 tablespoons yeast
1 tablespoon dough enhancer
½ cup gluten flour
5 cups fresh ground wheat flour
4 tablespoons flax seed, ground
½ cup wheat bran
½ cup olive oil
½ cup honey
1 tablespoon salt
5 cups white flour, or as much as takes to make smooth dough

Directions:

Mix water, buttermilk powder, potato pearls, yeast, dough enhancer, flax seed, wheat bran and wheat flour, together in bread mixer, pulse to mix well. Turn off mixer, cover, and let stand for 10 minutes.(This is the sponge stage) Add, oil, honey, salt, and the white flour. Add enough white flour, until it forms a ball, and cleans the sides of the bowl. Knead in mixer for 10 to 15 minutes.
Divide dough into four equal parts. Spray four bread pans with pam, shape each piece of dough into a loaf shape, and put into pans. Let rise until double in size, about an hour, sometimes longer. Bake at 350 degrees for 35 minutes. Immediately remove from pans, and let cool on wire racks.
