6 slices bacon
2 to 3 large bell peppers
1 tablespoon garlic-infused canola oil
2 cups frozen diced hash brown potatoes
1/2 cup sweet onion, diced small
1 pound ground beef
Several shakes Worcestershire sauce
1 fresh jalapeño pepper, diced small
Salt and pepper, to taste
8 oz. sharp cheddar cheese, shredded (save 1/2 cup for topping peppers)
1 can (8 ounces) tomato sauce

Directions:
Preheat oven to 350 F. Cook bacon until crispy, drain on paper towels and crumble into small pieces.

Bring a large pot of water to boil. Place the peppers in the boiling water and remove from heat. After 5 minutes, drain. Once peppers have cooled, slice lengthwise and remove the seeds and membranes.

Heat oil in a large skillet. Cook the hash browns until they are brown and crispy. Place in a large bowl. In the same skillet, add the onions and ground beef. Season with Worcestershire sauce and salt and pepper to taste. Cook until the meat is no longer pink. Drain well.

Mix together hash browns, ground beef, bacon, jalapeño, cheddar cheese (minus 1/2 cup) and salt and pepper to taste. Add tomato sauce and stir until well blended. Loosely stuff the beef mixture into the peppers and place them in a shallow baking dish. Bake 20 minutes, remove from oven and top with remaining cheese. Broil on high for a few minutes, until cheese has melted.
