1 Medium Spaghetti Squash, halved length wise, seeds removed and roasted, (Or cooked in the microwave.)

1 cup of your favorite brand of pizza sauce.

12 to 15 pieces of small nitrite free pepperoni rounds.

1 cup Horizon Organic Shredded Mozzarella Cheese.

Grated Parmesan or Locatelli for serving, (optional)

Crushed red pepper flakes for serving (optional)

An oven to bake the squash.

Tin foil and a baking sheet to set the squash on.

1. Cut the Squash in half

2 Clean out seeds and membranes

3. Turn Sauash upside down on a cookie sheet.

4. Bake until tender.

5. Preheat oven to broil to cook it a second time. Line a baking sheet with tin foil and set each cooked squash half (cut side up) on the baking sheet. Use a fork to gently scrape the squash into spaghetti like strands.

6. Add the Shredded Cheese, grated Parmesan, pizza sauce, and pepperoni rounds on top of the Squash.
