1c. (1/2 lb) butter, medium consistency
2 1/4 c. sifted all-purpose flour ( as much as 2 3/4 c. flour my be used)
1 tsp. vanilla
1 c. sifted confectioners' sugar ( do not use granulated)
1/2 lb pecans or walnuts (2cups) chopped medium (not grated)

In a 8-inch bowl, cream butter about 1 minute; add sifted confectioners' sugar, a little at a time, then vanilla, and beat about 1 minute. Add sifted flour alternately with the chopped nutmeats, beating well after each addition. Mold at once with fingers into desired shapes, such as crescents, rounds and ovals. Bake on very lightly greased inverted side of pan about 20 to 25 minutes in a 350 º oven until golden brown. Bake on upper rack last 5 minutes. When cold, dip into confectioners' sugar.

This is one of the cookies my grandmother, (Mama) made for us every Christmas. Then she'd fill a tin for each one of us ( a WHOLE tin just for us). She must have baked for days, because there were 7 of us. These are way better than Pecan Sandies.
