King Ranch Chicken Recipe

1 large onion - chopped
1 large bell pepper - chopped
2 cups Rotisserie chicken (I use more) - chopped or shredded
1 can Cream of Chicken soup
1 can Cream or Mushroom soup (for those who don't like mushrooms just add another can of Cr. of Chicken)
1 can of Rotel - original (or hot if you like it HOT)
2 tsp. chili powder
1/2 tsp. pepper
1/4 tsp. garlic powder
12 corn tortillas
8 oz. sharp cheddar cheese - grated

Spray a large skillet with cooking spray.

Saute onion and green pepper until tender. Stir in chicken and next 6 ingredients. Warm through and then remove from heat.

Spray a 9x13 baking dish with cooking spray. Tear tortillas into pieces and layer one third tortillas in bottom of baking dish, then one third chicken mix then one third grated cheddar cheese. Repeat 2 more times.

Bake in preheated 350º oven for 30-35 minutes until cheese is melted and dish is bubbly.

This is a FANTASTIC casserole dish that we've enjoyed for a number of years. It's named after the famous King Ranch in Texas. There's a number of ingredients but very easy to make and feeds quite a few.
