2 1/2 cups self-rising flour
2 cups sugar
1 1/2 cups oil
1 small can crushed pineapple (drain and save juice)
1/2 cup pecans
4 eggs, separated
1 1/2 teaspoon cinnamon
2 tablespoons hot water
1 1/2 to 2 tablespoons confectioner's sugar

Preheat oven to 325 degrees. Mix flour, sugar, oil, and crushed pineapple and set aside. In a separate bowl, mix four egg yolks, cinnamon, and hot water. Add to flour mixture. Beat four egg whites until stiff peaks form. Fold in to flour and egg mixture with spatula and add nuts.

Bake at 325 degrees for one hour and 10 minutes.

To make the glaze, mix reserved pineapple juice with confectioner's sugar. Pour over cake while warm. It will seem like too much glaze, but the glaze will soak into the cake.
