Butter; varies btwn 0 to ½ cup; optional to substitute vegetable oil. [Nominal is 6 tbsp.]
Milk or buttermilk, varies btwn 1 to 1-1/2 cup; [nominal 1 cup]
Cornmeal, varies btwn 1 to 2 cups; [nominal is 1 cup]; mainly it’s a [1:1] to 3:2 ratio with Flour.
Flour (unbleached wheat), varies btwn 0 to 1-3/4 cup; nominal is [1 cup]
Sugar (substituted Honey), varies btwn 1 tbsp. to 2/3 cup! [Nominal is about ½ cup.] (estimated; I just counted out 5 seconds on a slow pour)
Eggs, varies btwn 1 to 3; [nominal is 2]
Baking Soda, varies btwn 0 to 2 tsp; [nominal is ½ tsp.]
Baking Powder, varies btwn 0 to 1 tbsp; [nominal is about 1-1/2 tsp.]
Vegetable or Corn Oil, varies widely from 0 to 1 cup! Often substituted in part with butter. [zero]
Salt, varies btwn ¼ to 1 tsp; nominal is ½ tsp to taste. [about ½ tsp]

Preamble: This recipe is a sample of similar recipes; they all share the basic ingredients but vary slightly to wildly; one even called for yogurt, and another for skillet frying instead of baking. Choose the portions as you like; for my first try I pretty much when with the nominal.

Directions vary widely:
1. Use 8 x 8 or 9 x 9 pan.
2. Heat oven to 375 to 425*F; nominal is 400*F
3. Grease pan with bacon drippings or oil or butter.
4. Mix dry ingredients in one bowl
5. Melt butter and mix with wet ingredients in another bowl
6. Combine bowls to create batter; eliminate lumps
7. Bake for 20-25 minutes; use toothpick method. Crust should be golden-brown.
8. Let cool for 5 minutes before carving.
