Lemon Meringue Pie Recipe

1 1/2 cups sugar
2 tablespoons cornstarch
dash salt
1 1/2 cup water
3 egg yolks, beaten
1 teaspoon grated lemon peel
2 tablespoons butter
1/2 cup lemon juice
1 baked 9" pie crust

Combine sugar, cornstarch, and salt. Stir in water. Bring to a boil over medium heat and cook, stirring constantly until thick; about five minutes. Remove from heat.

Stir small amount of hot mixture into egg yolks, and then return to remaining mixture. Bring to boil and cook for one minute. Remove from heat. Add lemon peel and butter. Slowly stir in lemon juice.

Cool to lukewarm and pour into pie crust.
