1 medium butternut squash, peeled and cubed into 1" pieces
1 cup grape tomatoes, sliced in half
1 ripe avocado, cubed
1/2 pound smoked Gouda cheese, cubed
1/2 cup basil, chopped
Olive oil
Balsamic vinegar
Salt
Pepper

Directions:
Directions:
Preheat oven to 425 degrees. Roast butternut squash with olive oil, salt, and pepper at 425 degrees for 25 to 30 minutes. Combine cooked squash with tomatoes, avocado, cheese, and basil. Dress with olive oil, balsamic vinegar, and add salt and pepper, to taste.
