1/2 c Bacon Fat
1/4 c Flour
1/2 c each of : Green Bell Pepper, Celery & Onions, finely chopped
1-1/2 T each of: Salt, Gumbo File & Ground Pepper
1 clove Crushed Garlic
1/2 Bay Leaf
2 cloves Pickling Spice
2 cans Italian Style Tomatoes
1 small can Tomato Sauce
3 c Water
2 c Cooked Chopped Okra
1 lb. of Cooked Lump Crab Meat
1 lb Shrimp, cooked, shelled & deveined
1/2 cooked Rice
Worcestershire Sauce, Tabasco and Salt to taste

Directions:
Directions:
In a large kettle heat bacon fat and slowly stir in flour, and cook the roux, stirring constantly until it begins to take on color.
Add bell pepper, celery and onion and cook the vegetables, stirring, for 2-3 minutes or until the onion is slightly browned.
Stir in thoroughly salt, gumbo file, ground pepper and crushed garlic.
Put bay leaf and pickling spice in cheesecloth bag and add to pot.
Add Italian tomatoes, tomato sauce, water, okra, crab meat and shrimp.
Stir in rice.
Simmer and serve over rice.
