Milk
Butter

Directions:
Directions:
Boil potatoes, carrots, and onions, which can also be sautéed and added later. When soft, drain vegetables, keeping some of the liquid for later thinning. Mash thoroughly. Add butter.and let it melt. Add milk to reach desired consistency which should be on the thick side. Add salt and pepper to taste. Serve with Scottish Scones and a salad.

This was a favorite meal growing up, and was usually cooked by my father when we lived in upstate New York. It's great on a cold night, and is so easy to make.
