2 Chicken breasts
1 large chopped onion
1 cup sliced celery
1 cup sliced carrots
2 cloves minced garlic
2 (14 oz) cans chicken broth
1 (16 oz) can whole tomatoes
1/2 cup picante sauce (mild or hot, whichever you prefer)
1/2 cup uncooked long grain rice
2 tsp. basil
1 Tbl. parsley (or less if flakes vs. fresh)
Add water if needed to cover chicken or for desired consistancy

*Boil chicken breasts separately in water until cooked. Cut up and set aside.

In large pot, combine all ingredients except for chicken and parsley and bring to a boil. Reduce heat. Cover and simmer 20 minutes. Then add parsley and cut up cooked chicken and simmer another 15 minutes.
