3 cups sugar
2/3 cups cocoa
1/8 teaspoon salt
1 ½ c whole milk
¼ c butter
1 teaspoon vanilla

Directions:
Directions:
--Use only a wooden spoon for stirring.

1. Line an 8 or 9 inch square pan with foil.
2. Butter the foil.
3. In large pot stir together the sugar, cocoa and salt.
Stir in milk with wooden spoon
4. Cook over medium heat, stirring constantly til mixture comes to a full rolling boil.
5. Boil without stirring to 234* on candy thermometer or until syrupy when dropped in cold water and forms a soft ball which flattens when removed from water. (20-30) minutes
5. Remove from heat and add butter and vanilla
DO NOT STIR
Cool at room temperature to 110º (about 2-2 ½ hours)
6. Stir until fudge thickens and loses some of its gloss. About 15-20 minutes.

When it starts to look more like frosting than a thick syrup it is ready. Quickly spread in pan.

Cool and cut into squares.

To store, loosely wrap in foil and keep in fridge.
