2 cups sugar
1 tbsp. corn meal
1 tbsp. flour
5 eggs
pinch of salt
1 cup pecans coarsely chopped
1 cup drained crushed pineapple
1 cup flaked coconut
1 stick butter, melted
1 unbaked pie shell

Directions:
Directions:
1. Beat sugar, cornmeal, flour, eggs and salt together.
2. Gently stir in pecans, pineapple and coconut DON’T BEAT IT
3. Stir in melted butter and mix well.
4. Bake at 300º in unbaked pie shell for 50-60 minutes

After baking cover the crust edges and cook 15-20 more minutes or until the pie is set.

May use whipped topping with a little almond extract.

Sprinkle with toasted coconut.
