1 tablespoon extra virgin olive oil
2 tablespoons butter
3 tablespoons flour
1-1/2 cups whole milk (or 2%-just not skim)
3 cups shredded cheddar cheese, divided
Pinch of nutmeg
Salt & pepper, to taste
1 pound elbow macaroni, cooked and drained
1/2 cup bread crumbs

Directions:
Heat a medium skillet with oil and butter. When butter melts, add flour. Cook, whisking flour and butter together until smooth and flour has cooked, about 3 minutes. Slowly add milk, whisking constantly. Gently bring to a bubble while stirring frequently. Allow milk to thicken. Add 2 cups cheese a handful at a time. Season with spices.
Add pasta and turn to coat. Transfer to a 1-1/2 qt greased baking dish and cover with remaining cheese; sprinkle with bread crumbs. Place under broiler until bubbly.
