3 cups flour
1/16 cup of salt
1 egg
3/4 cup of water
1/4 cup sour cream
3/4 TBSP oil

FILLING:
Potatoes(10 lb bag) peeled and quartered.
1 large packet(500g) old cheddar cheese,grated

1. Using a food processor makes this very easy but it is not necessary.

2. Mix ingredients together in the order they appear here.

3. Knead a few minutes and let rest at least 15 minutes before rolling. Making the dough a day ahead of time and refrigerating seems to make it easier to roll out.

4. Mix mashed potatoes and cheddar.

5. Add salt and pepper to taste.

6. Pinch off piece of dough and roll until thin; this will take some effort since the dough is tough to roll!

7. Use a 4 inch cutter, stamp out rounds and place about a TBSP of filling mixture per perogie.

8. Fold over and pinch together(turn-over style). Be aggressive with pinching them closed- they won't fight back!

9. Cook fresh perogies, boil salted water and add perogies and cook until they float to the top and then a little longer.

They can be eaten as they are,fresh from the pot or fried lightly in butter. Serve, if desired, with caramelized onions and fried bacon and sour cream to garnish.

To freeze for later use place about 1 inch apart on waxed paper- lined baking sheet and freeze for a day and then place in bags.
