2 large eggplant sliced thin lenghwise
3 lbs ground beef (chuck)
1 lbs pork
2 cups Italian bread crumbs
2 cups Romano Cheese
2 Eggs
Fresh chopped parsley
3 cloves garlic -crushed or minced
milk
Mozzarella Cheese
flour and egg for coating eggplant before frying

Directions:
Directions:
Set sliced egg plant on paper towels to pull out excess moisture. Lightly salt and pepper. Mix meat, bread crumbs, cheese, eggs, parsley, garlic and milk. Spread spoonful of meat mixture on top of 1 slice eggplant and top with 1 slice of eggplant. Dredge in flour and egg. Fry "sandwich" in oil until brown. Set aside until all is done.

In large baking dish, layer sauce, eggplants, mozzarella cheese, sauce, eggplants, mozzarella cheese. Cover and bake for 1 hour at 375º.
