4 Bell Peppers (cleaned and sliced lengthwise)
6 slices Italian Bread
1 can Anchovies
1/2 can Sliced Black Olives
Olive Oil
2 tbsp. + 2 tsp. White Vinegar (divided use)
Salt and Pepper to taste
3 cloves Garlic (chopped)
1/2 c. Parsley (chopped)
1/2 c. Parmesan Cheese
Water
Optional: Use full can of olives and add Pignoli Nuts

Directions:
Preheat oven to 350º
Boil a large pot of water, add 2 tbsp. white vinegar; parboil peppers for 5 minutes; drain and cool
Soak bread in water or milk, squeeze excess
Slightly mash the anchovies, save oil
Mix bread, garlic, parsley, cheese, olives, salt and pepper; add anchovy oil, 2 tsp. white vinegar, olive oil to moisten
Add Pignoli if desired
Stuff peppers
Bake 1 hour or until the tops are browned
