Ingredients:  
1 lb String Beans (cut off stem and cut in half)
3 lbs. Red or Golden Potatoes (peel and cut into bite-size pieces)
Olive oil
1 tbsp. White Vinegar
Salt and Pepper to taste
4 - 5 cloves Garlic (chopped)
3/4 c. Parsley (chopped)

Directions:
Directions:
Start potatoes in cold water, add white vinegar, boil until tender and firm
Remove potatoes to a large bowl
Add string beans to water and boil about 4 minutes; taste for firmness
Drain, rinse under cold water
Mix potatoes and beans with white vinegar and olive oil
Add salt and pepper to taste
Add garlic and parsley.

Serve warm or cold
Optional: Use white balsamic vinegar in place of white vinegar
