1 cup quinoa
2 cups water
salt & oil
1 large red pepper (finely diced)
1 large green pepper (finely diced)
2 cups shelled edamame (soy beans)
2 large carrots grated
1 cup diced celery
1/2 cup roasted shelled sunflower seeds

Dressing:
1/2 cup vegetable oil
Juice of two lemons
1 clove crushed garlic
salt & pepper

Directions:
Directions:
Cook and cool quinoa and add to a large salad bowl.
Finely dice peppers and celery, grate carrots, thaw edamame beans, and add all to cooled quinoa.
Whisk together oil, lemon juice, garlic and salt and pepper. Blend dressing into quinoa and sprinkle with sunflower seeds.

I call this my Christmas salad because all the colors are so pretty. It lasts a few days in the fridge which is great during the busy holidays.
