3 full racks of baby back ribs or St.Louis cut ribs.
3 c. Brown sugar
Rib rub mix(See the miscellaneous section)

hickory or apple smoking chips

Directions:
Pat each rack dry. Cut into 3 servings. Rub with 2 TBS rib rub on both sides. Pat meat side with 1/4 c. Brown sugar. Wrap tightly in Aluminum foil and place sugar side up in the refrigerator over night . Cook at 225º for 4 hours in foil and unwrap and cook 4 hours more unwrapped while applying as much smoke as you desire. Serve with sauce on the side.

Brian has perfected this over the years but the recipe was given to him by his uncle Randy. We prefer to use a propane smoker as it is easier to control the heat.
