Refrigerated pie crust
3-4 tomatoes
fresh chopped basil
1/2 mayonnaise
1/2 grated cheddar cheese
salt and pepper

Directions:
Directions:
Line 9-inch pie plate with the pie crust. Slice tomatoes, place on several layers of paper towels, and sprinkle with salt. Let the tomaotes drain of their juice.
Layer tomatoes then sprinkle basil on top. Mix together the mayo, cheese, salt & pepper to taste. Adjust mayo and cheese to your liking. Plop spoonfuls on top on the tomatoes and basil and spread around. You don't have to cover the whole pie; just shy of the edges.
Bake at 350º for 30 minutes or until bubbly.
