8 tablespoons paprika
4 tablespoons powdered garlic
4 tablespoons mild chili powder
3 tablespoons ground black pepper
3 tablespoons kosher salt
2 tablespoons whole celery seed
1 tablespoon crushed celery seed
4 teaspoons whole yellow mustard seed
1 tablespoon dried crushed oregano
1 tablespoon dried crushed thyme
1 tablespoon whole allspice seeds
1 teaspoon ground allspice
1 tablespoon whole coriander seed
1 teaspoon ground coriander
1 teaspoon Ac'cent *

12-16 TBS brown sugar

Mix together all but the brown sugar. Save the brown sugar to pat 1 TBS on each spiced rib portion.Makes a bit more than two cups, enough for about 12 pounds of ribs. You can keep in a jar for months. I usually make a triple batch and store it in a tupperware©Container . When shopping remember the small spice containers hold about 3 TBS of spice .

Brian Grew up in Memphis. He grew up on BBQ and going to the Rendezvous. Restraunt for Ribs. I had this the first time I visited Memphis in 1990. This is a must when making ribs in our house. This dry rub and a little brown sugar is perfect.
