1 large yam or sweet potato (approx 3/4 lb), cut into chunks
4 Tbsp butter
1 pkg yeast
3 Tbsp warm water (110 degrees)
1/2 cup milk
1/4 cup sugar
2 tsp. salt
1 egg
3 1/2 to 4 1/2 cups flour
1 egg and 1 Tbsp water for wash

Directions:
Directions:
Boil the yam in salted water until tender. Peel and mash. Melt the butter.
Let potato and butter cool.
Dissolve the yeast in the 110 degree water. Let sit about 10 minutes.
Mix 1 cup of mashed potato, butter, milk, sugar, salt and egg.
Pour into yeast mixture and stir. Gradually beat in 3 1/2 cups flour.
Turn onto floured board. Knead 10 minutes, adding up to 1 cup of additional flour.
Put in oiled bowls and cover. Let rise in warm place for 1 hour until doubled.
Punch dough down and divide into 24 pieces. Roll each piece into 10 " lengths. Tie in knot.Tuck bottom end underneath and top end in center on top.
Put on baking sheets. Cover and let rise 30-45 minutes. Beat 1 egg and add 1 Tbsp water. Brush this egg mixture over rolls. Bake at 375º 15 minutes.

This recipe was given to me by my sister Susie years ago. I traditionally made them at Thanksgiving and sometimes for Christmas. One year I had made them on Christmas eve for our Christmas day dinner and had taken them out of the oven to cool when I left to make a run to the pharmacy to pick up a prescription before they closed for the holiday. When I came back, my brother Tim had come into the kitchen at dinner time (6:00 sharp in his mind), discovered them and ate almost all of these very yeasty rolls for his dinner! I had to start all over to have them for Christmas dinner. I learned not to leave temptation out. And these smell so good and taste so good...definitely tempting.
