Ingredients: Sweet or Hot sausage (stab when cooking so juices come out to flavor sauce) 1 large onion finely chopped 4 cloves of garlic chopped very fine ¼ cup or so EVOO, coat bottom of large saucepan with olive oil One 32 oz can of plum tomatoes (crush by hand) One 32 oz. can of puree or crushed tomatoes 1 small tomato paste ¼ cup of fresh chopped parsley ¼ cup fresh basil or you can sprinkle less dry basil 2 tbsp oregano ¼ cup of red wine 3 each beef and chicken cubes 1 or 2 tbsp sugar to remove any bitter taste from canned tomatoes 1 tbls salt and 1 tsp pepper ** If you like some “kick” you can sprinkle some chili powder & red pepper flakes ** If you like, you can add crushed Fennel seeds ** Make meatballs on side in oven or you can cook them in sauce if you want

Directions:In large saucepan, cook sausage about 5 minutes (add onions after 2 minutes). Add chopped garlic and tomato paste and stir constantly for about 1 more minute (don’t allow garlic to burn). You may need to add more olive oil if it looks too dry. Add Crushed tomatoes & tomato puree, wine, sugar, beef & chicken cubes and seasonings. If sauce looks too thick, add some water Bring to slight boil then cook on Low about 30 minutes. |
