The dressing:
1/2 c peanut oil or Canola oil
1/4 c fish sauce
1 TBS rice vinegar
1 tsp soy sauce
1 lime, juiced
2 tsp fresh ginger, minced
1 tsp sugar
1 TBS Srirachi
Kosher salt
The salad:
1 large green papaya, peeled and julienned, see note
1 cup bean sprouts
1 medium cucumber, peeled, seeded, and julienned
1 red onion, sliced thin
1 small red chile, sliced thin
Fresh cilantro leaves, for garnish
Butter lettuce leaves, for serving

Directions:
Directions:
Mix the dressing. Set aside. Mix Salad ingredients. Serve in Butter Lettuce cups.
optional add peanuts for crunch.
