1 box long grain wild rice
½ C chopped onion
½ stick butter
1/3 C. flour
Salt & pepper
1 C. half and half
2 C. chicken broth
2 C. cubed cooked chicken
1/3 C. pimento
1/3 C. parsley
3 T. sliced almonds

Directions:
Directions:
1. Cook rice as directed on box.

2. Saute onion in butter. Blend in flour, salt, and pepper. Gradually stir in half and half and chicken broth. Cook until thickened.

3. Mix sauce and chicken. Add rice, pimento, parsley, and almonds. Sprinkle some almonds on top.

4. Bake in 2 quart buttered casserole dish at 425˚ for 30 minutes.

Grannie always made this when we visited. I make it when we get a roasted chicken and only eat half of it. I pick the chicken off the bones and make this recipe. It is very good. Has a rich taste and a bit of a crunch from the almonds.
