1 - 10oz rotel diced tomatoes, drained
1 - 8oz sour cream
1 - 3oz cream cheese, softened
1 tsp ground cumin
1 clove minced garlic
4 cups shredded romaine lettuce
1 - 15oz can of black beans, rinsed and drained
1 - 15oz whole corn, drained
1 avocado, peeled and chopped
1 - (4oz) pimento, drained
1 cup (4oz) shredded sharp cheddar cheese
2 - 4oz sliced black olives, drained
chopped green onion

Directions:
Directions:
1. Place the tomatoes, sour cream, cream cheese, cumin and garlic in a blender and chill.
2. In a large bowl, layer the lettuce and add remaining ingredients.
3. Spoon tomato mixture evenly over top.
4. Sprinkle with green onion.
5. Cover and chill for one hour.
