German Hot Potato Salad Recipe

2 pounds of potatoes, peeled
3 to 4 slices bacon
3 TBSP minced onion
1/4 cup sugar
1/4 cup vinegar
2/3 cup water
1/2 tsp salt
1/8 tsp pepper
1 TBSP cornstarch
1 TBSP chopped parsley

Directions:
Directions:
1. In saucepan, cover and cook potatoes in boiling water for fifteen to twenty minutes or until tender. Drain well.
2. Cool slightly and slice and place in large bowl.
3. Meanwhile, in large skillet, cook bacon until crisp. Drain, reserving two TBSP of bacon drippings.
4. Add onions and brown in drippings for about three minutes.
5. Add sugar, vinegar, 1/3 cup water, salt and pepper.
6. In small bowl, dissolve cornstarch in remaining water.
7. Add to onion mixture and cook, stirring, until clear, thickened and bubbly about three minutes.
8. Cook and stir for additional two minutes.
9. Pour hot mixture over sliced cooked potatoes.
10. Add crumbled bacon and if needed, additional salt and pepper.
11. Garnish with parsley.
