4 Eggs
3/4 c. Sugar
2 tsp. Flavoring (Vanilla, Lemon, Anise, or Almond)
3/4 c. Canola Oil
1 1/2 c. Flour
Pinch Salt
2 tsp. Baking Powder
2 c. Confectioner's Sugar

Directions:
Directions:
Preheat oven to 350º
Grease and flour 3 aluminum ice cube trays
Beat eggs and sugar for 5 minutes; add remaining ingredients, mix well
Bake 15 minutes
Remove from pan immediately and cut diagonal slices (while hot)
Let cool and frost

Frosting: mix confectioner's sugar with a tablespoon of hot water and 1/2 tsp, of the flavoring used in cookies; add hot water for desired consistency

If you don't have aluminum ice cube trays, use a 10 x 12" baking pan. Increase baking time until an inserted toothpick comes out clean. Slice lengthwise in thirds and slice on a diagonal
