4 boneless pork chops
1 tsp dried thyme, crushed
1/4 tsp ground black pepper
1 TBSP butter
1/4 cup apricot or peach preserves
1 TBSP dijon style mustard
1 TBSP white vinegar
1 TBSP chopped green onion

Directions:
Directions:
1. Sprinkle combined seasonings over both sides of pork chops.
2. Melt butter in a large non-stick skillet over medium heat.
3. Cook pork chops five to six minutes per side or until juices run clear.
4. Remove from heat and keep warm.
5. In a small bowl, combine preserves, mustard, vinegar and green onion.
6. Add to skillet and cook one to two minutes or until mixture boils and thickens slightly.
7. Add back pork chops to skillet and heat through.
