2 eggs (or egg replacement equivalent)
1/2 cup vegetable oil
1 teaspoon vanilla
3/4 cup brown sugar
1 1/2 cups gluten-free flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
3 cups oats
1 cup craisins

Mix dry and wet ingredients separately then combine together and add craisins. Drop rounded dough onto an ungreased cookie sheet and bake at 350 degrees for 8-10 minutes.
