2 Boneless and Skinless Chicken Breasts (cubed)
1/2 lb. Sausage (sliced)
1 pkg. Frozen Artichokes (thawed and drained)
1/2 Onion (chopped)
2 Roma Tomatoes (quartered)
1 can med. Green or Black Olives (drained)
3 cloves Garlic (chopped)
1/2 c. Parsley (chopped)
2 tbsp. Tomato Paste
1/2 c. Red Wine
1/4 c. Capers or Caper Berries (chopped)
1 Red Bell Pepper (cleaned and sliced)
1 qt. Chicken Broth
4 Potatoes (cubed)
Flour
Salt, pepper, oregano, crushed red pepper to taste
Olive Oil

Directions:
Directions:
Preheat oven to 425 º
Sprinkle tomatoes with salt and pepper and roast for 30 minutes
Flour the chicken
Microwave potatoes until tender but firm
Add olive oil to pan; fry chicken and sausage, season with salt and pepper; remove and drain
Fry potatoes, season with salt and pepper; remove and drain
Add onions, artichokes, bell pepper, olives, garlic, capers, oregano, crushed red pepper and parsley
When cooked, deglaze pan with wine
Add tomato paste and let cook out before adding sausage, chicken, potatoes, roasted tomatoes and chicken broth
Cook until all flavors are blended and broth has boiled
