8 russet potatoes
1 3/4 cup oats
2 1/2-3 cups of flour
1 tsp salt
Salt Pork in thin slices
Milk only if moisture is needed

Directions:
Directions:
Place a large pot of salted water on stove and bring to a boil.
While water is warming up grind or finely grate up potatoes, add oats, flour and salt together in large bowl. If it seems very dry you can add a little milk 1 tsp at a time.
Form into palm side dumplings, make a hole in the middle with finger and place a few slices of salt pork in the middle. Close and seal. Place dumplings in boiling water. Boil for 45 minutes, turn off heat and let sit in water for 15 minutes.

Serve with salt, pepper and butter.
