1/2 pineapple, peeled and cored
1 tbsp. honey
1 tbsp. lime juice
vanilla ice cream
fresh mint

Directions:
Directions:
Preheat barbecue to medium high. Cut pineapple into thick 1/2" rings. Brush both sides with honey. Barbecue pineapple, with lid closed, until grill marks form, about 4 min per side. Transfer to a cutting board and cut into 1/2" wedges. Toss pineapple with lime juice in a small bowl. Scoop ice cream into bowls and top with pineapple. Garnish with mint.
