2 T olive oil - divided
1 pound ground meat
1 onion, diced
3 cloves garlic, minced
1 can petite diced tomatoes - 14.5 oz
1 can crushed tomatoes - 14.5 oz
2 1/2 T tomato paste
2 tsp dried basil
3/4 tsp oregano
1 tsp sugar
8 oz lasagna noodles , broken up
1 1/4 grated mozzarella cheese
1/2 cup parmesan cheese
8 oz ricotta cheese- optional
4 cups chicken broth

Directions:
Directions:
Heat oil in large pot. Crumble beef into pot with the salt and pepper. Drain
Add onions and sauté. Add garlic
Add chicken broth, tomatoes, sugar and herbs.
Boil then simmer for 20 minutes.

Prepare noodles as directed on the box. Reserve 1 cup of the pasta water before draining
Add the noodles to the soup along with the pasta water.

Mix the cheeses together.

Ladle the soup into bowls and top with cheese mixture

Don't worry if you don't have lasagna noodles. I have used others and it just as good.

Serve with a crusty bread. Yum!!
