1 lb fresh shrimp with shells or defrosted frozen shrimp
2 Tbsp plus 1/2 cup lime juice
1/2 cup finely diced onion
1/3 cup diced cilantro
1/2 cup ketchup
1-2 Tbsp Tobasco Sauce
2 Tbsp olive oil
1 cup diced cucumber
1 avocado, pitted and diced
salt and pepper to taste

Directions:

Boil 1 qt salted water
Add 2 Tbsp lime juice
Then scoop in shrimp
As soon as water returns to a boil, remove it from the heat and drain the water.
Let shrimp sit in covered pan for 10 minutes.
Remove shells and if desired, devein.and remove intestinal tract. (the dark middle line)
Toss shrimp with 1/2 cup lime juice
Cover and refrigerate.
Once cooled, mix with all the remainder of ingredients.
Serve cold in a bowl with lime slices and cilantro sprigs for garnish
