Crust
3/4 cup shortening
1 1/2 T sugar
2 1/4 T salt
1.5 pkg dry yeast
1/2 cup warm water
3/4 cup cornmeal
3 to 3 1/2 cups flour
oil to grease pan

Filling
28 oz italian tomatoes
2 T oil
1 sm chopped onion
1 sm chopped gr pepper
1 clove garlic minced
3/4 t oregano
1/2 t fennel seed
1/2 t salt
1/4 t pepper
4 oz mushrooms, drained
1 lb italian sausage
1/3 cup parmesan cheese
10 oz mozzarella cheese- thinly sliced
or 1 lb grated

Crust
Heat 1 cup water, shortening, sugar, salt until shortening melts. Cool to luke warm. Soften yeast in 1/2 c luke warm water. Combine. Add cornmeal. Add 2 cups flour and beat well. continue to add flour to make a soft dough. Turn onto a slightly floured board. Knead until smooth and elastic. Add more flour if needed.

Brush 12" pizza pan(2" deep) with oil. Press dough evenly over bottom and sides of pan. Bake at 425 for 5 min.

Brown sausage, crumble onto crust. Add cheese. Add with tomatoes and remaining ingredients. Top with parmesan cheese.

Bake at 425 for 45 min. Let stand 5 min.
