1 lb dry Great Northern beans
8 cups water
1/2 tsp salt
1 ham hock
1 cup carrots, chopped
1/2 stalk celery, chopped
1 cup onion, chopped
1 tsp minced garlic
1 tsp mustard powder
2 bay leaves
2 cups chopped ham
1/2 tsp white pepper

Directions:
Directions:
Rinse beans, sorting out bad ones.
Bring water to boil, add salt and beans and remove from heat.
Let soak for one hour.
Return to heat - add ham on bone, carrots, celery, onion, garlic, mustard and bay leaves.
Bring to boil, reduce heat and simmer one hour.
Remove bone and bay leaves, return ham to pot and simmer for 30 more minutes
Season with whiite pepper to taste.
