Peach Pie in a Jar Recipe

6 cups fresh peaches, peeled and sliced
3/4 cup sugar
1/8 tsp. salt
1/2 tsp. cinnamon
1/4 tsp nutmeg
3 T tapioca
2 T butter
2 unbaked pie shells

Directions:
Directions:
Line a 9 inch pie pan with pastry
Place peaches in large bowl.
Mix together sugar, salt, cinnamon, nutmeg and tapioca.
Pour over peaches and gently mix. Let stand for 15 minutes.
Pour into pastry lined pan..
Top with remaining crust, cut slits in top to allow steam to escape and bake in 325º oven for 50-60 minutes until pie is bubbly and crust is brown.

Note: For convenience, I make several batches of above recipe and put them in quart jars. I seal the lids and process in a boiling water bath for 20 minutes.
One quart jar makes one 9 inch pie.

To keep peaches from turning brown, make vinegar/water solution [1 tsp vinegar to 4 cups water] and slice peaches into the water solution
After all peaches are sliced, remove and rinse.
[Or sprinkle with 2 T lemon juice and don't rinse.]
