3 T Olive Oil
1 Yellow Onion, diced
2 stalks Celery, sliced
Baby Carrots, sliced (more or less depending on preference)
1/4 tsp Smoky Paprika
2 T Chili Powder
2 tsp Garlic Salt
2 T Wahoo Chili (Pampered Chef makes it. Sub more Chili Powder if you don't have it)
1 tsp Cumin
1 pkg Frozen Corn
1 can Black Beans (drained and rinsed)
1 can Petite Diced Tomatoes
Grated Cheese, Sour Cream, Corn Tortillas or Tortilla Chips

Directions:
Directions:
Steam baby red potatoes in microwave until soft.
Heat olive oil in large pot.
Add onion, celery and carrots and cook until onion is translucent.
Add spices and stir well. Let the mixture cook together while you keep stirring for 2 minutes.
Add canned beans, tomatoes and frozen corn.
Stir well and simmer about 10 minutes or until carrots are "al dente".
Cut cooked baby potatoes into quarters and put in bottom of serving dish or soup bowl.
Cover with vegetable mixture.
Sprinkle with grated cheese & top with a dollop of sour cream.
Serve with corn tortillas or tortilla chips.

I threw this together one night when we wanted something quick but still somewhat healthy. Feel free to add more vegetables to the stew, these were all I had on hand at the time.
