1/2 c. Butter
1 1/2 c. Chopped celery with leaves (approximately 3 stalks)
1 large yellow onion chopped
2 8 oz. Packages of corn bread stuffing mix
2 8 oz. Packages of white mix
3 Granny Smith apples chopped
1 c. Dried cranberries
1 1/2 tsp. Dried sage crushed
1 tsp. Dried thyme crushed
1/2 tsp. Salt
1/2 tsp. Ground black pepper
3 to 3 1/2 c. Chicken, Turkey or Vegetable broth. ( I have tried it all three ways)

In a large Dutch oven melt butter over medium heat. Add celery and onion; cook and stir about 5 minutes or until tender. Remove from heat.

Stir in stuffing mixes, apples, cranberries, sage, thyme, salt, and pepper into the onion mixture. Drizzle with enough of the broth to moisten, tossing lightly to combine. Spoon stuffing into a 3 qt. rectangular baking dish.

Cover tightly with plastic wrap; chill up to 24 hours.

Preheat oven 325 degrees. Bake covered, for 45 minutes. Uncover and bake for 15 to 20 minutes more or until hot in center. Add more broth as it cooks if needs it.
