Lemon Bars Recipe

CRUST:
1 cup flour
1/8 tsp salt
1/2 cup confectioner's sugar
1 stick (8TBSP) butter, melted but not hot

FILLING:
2 large eggs
3/4 cup sugar
1 1/2 TBSP flour
6 TBSP juice from two lemons
2 tsps finely grated lemon zest

RACK and OVEN:
1. Adjust oven rack to lower-middle position and pre-heat oven to 325º.
2. Spray an 8x8 baking pan with cooking spray.
3. Fit and 8x16" piece of foil across the pan bottom and up two sides as foil overhangs to pull bars from the pan.
4. Spray the foil with vegetable cooking spray.

CRUST:
5. In a medium bowl, mix the flour, salt, confectioner's sugar.
6. Stir in the butter to form dough.
7. Press dough into pan bottom (*)
8. Bake until pale golden, about twenty minutes.

FILLING:
9. Combine ingredients for filling and place into cooled crust.
10. Bake until set or another twenty minutes.
11. Let cool in pan for a few minutes and then pull bars from pan using foil handles. Cool on wire rack.
12. Cut into squares and serve.

*When pressing dough into pan bottom, the bottom of a measuring cup, dipped in flour helps.
