1 cup chopped onion
2/3 cup chopped celery
2/3 cup chopped bell pepper
1 stick margarine
1 can Rotel
Chicken broth
4 chicken breasts, cooked and cut into pieces
1 (16-oz.) pkg. Spaghetti
1 lb. Velveeta

Directions:
Directions:
Saute onion, celery and bell pepper in margarine. When onions are clear, add tomatoes and 1/2 cup chicken broth. Carefully fold in chicken pieces and set aside. Cook spaghetti in remaining chicken broth + water, if needed. Cut cheese into small cubes. Drain spaghetti. Add cubed cheese to chicken mixture and layer with spaghetti in 9x13-inch casserole. Bake 35-40 minutes at 350º uncovered.

May freeze after assembling and before baking.
